Fast tofu-based breakfast

If you follow this blog for a while, you might know how much I praise and appreciate breakfast. Once upon a time, when I had to be at work around 8 o'clock, I used to wake up very early in the morning to catch at least one full day of breakfast. 
Nowadays, I do have my natural clock who wakes me up in due time to prepare a tasty breakfast, either I am on the road or at home. My usual breakfast menu includes fruits and veggies - avocado and tomatoes are a must -, a big mug of coffee, an egg and cheese - as much cheese as possible. When I am really in a hungry mood, I can accept some salmon and some fried mushrooms too.
Today, I really wanted to try something different, and thanks to my early morning son, I got the chance to actually do it. I used various items available in my kitchen:
- peanut oil
- Taifun tofu cheese
- a ripe bio avocado
- a Arche Teriyaki sauce which has an excellent taste and I plan to use in various combinations. One observation though: why, oh why, the bottle is sealed straighter than the Alcazar prison and in order to open it, I had to almost cut a finger while trying different desperate methods...To be continued...

The preparation of this delicious dish, lasts around 15 minutes. 
First, you need to pour the oil in the pan and wait for around 5 minutes until it got hot.
Slice the tofu and put in the pan and turn on sides every couple of minutes. I didn't wanted too fried, so after around 10 minutes, everything was ready.
I added the sliced avocado and spread the sauce and that's it!
The Taifun tofu I tried doesn't have any specific taste, but it receives from the peanut oil and the sauce.

A delicious pistachio sandwich

I am the biggest fan of breakfast and thus, I am trying to be as creative as possible, while keeping up with a busy schedule and a baby too cute to be left on his own any single second. The last week, as I was up early for preparing a very special recipe - details coming up soon - I had some pistachio leftover and decided to try something new for my black bread slice. 
The preparation takes around 5 minutes, which is good timing as you want to do it again and again. As long as you have enough pistachio, why not? You only live once...

Here are the ingredients and the basic directions:
10 pistachio - for the beginning - crushed in the blender
one slice of avocado cream
one drop of olive oil
one slice of yellow cheese
Everything spread on a big black bread slice

Energy morning treats by Ovomaltine

I am not a big fan of chocolate spreads and I still remember my shock when my first breakfast in Switzerland I was invited to put some Nutella chocolate on my bread. Sounded so barbarian for me that I needed years till I finally accepted to try. When I spread the crunchy Ovomaltine spread on my black bread, and started to taste it, my bad impressions were history but the results were more than surprising. It does taste as chocolate, but has some special strong taste that can be enough for the rest of the day. And, in fact, it was as I was full enough to do not dream about anything else. 
As I am a coffee fanatic, replacing the coffee with any other substitutes, makes me feel like a traitor. For my culinary explorations, I try once in a while some cocoa, but no way to make a long term commitment of replacing it for good. Especially not in the morning. Thus, I prepared my Ovomaltine treat in between two afternoon coffees. I used 180 cold milk for 18 g. Ovomaltine. I did not add sugar, but mixed extra as it takes longer to dissolve. 
It contains a healthy mixture of malz and cocoa, with many vitamins added such as Calcium, Magnesium and B12. So good and self sufficient that at least for one hour I forgot that I only need coffee. Drinking it in the morning made it for a full meal, with that energy dosis that everyone needs to go through the daily challenges.

Velvet scrambled eggs

Today was not the best day in my life, but I'd end it up in a gracious way, with the lecture of an interesting article about how to make better scrambled eggs: use a saucepan, add butter and be ready to eat only after 30 minutes. 
Honestly, I wondered for a long time why my scrambled eggs are always looking pathetic. This recipe gave me the hope that one day I will be able to make a good morning omlette with the texture of the velvet.
