Saturday evening, after 8pm, you are not in the mood for too much cooking and if it's cold outside, going out to a fancy restaurant isn't a goos idea either. In such situations, with a hungry gang mumbling around, my creativity should be put on work immediately. I was lucky enough to find something interesting and the first reaction I remember was: it tastes as at the restaurant. A good encouragement for a sunny week, isn't it?
And, here is the suggestion:
two spoons of sesame seeds
5 walnuts grounded
one spoon of pesto
salt
parmesan
100 ml. sunflower oil
The sesame, with pesto, oil, and walnuts are fried for 5 minutes at 150C.
The boiled spaghetti - in salted water - are added and mixed together with the previous combination+the parmesan and maybe some pesto.
The total time dedicated to preparation: maximum 20 minutes.
The eating pleasure: almost infinite.

Vegetarian treats: smoked cheese with mushrooms
I am trying to keep myself as much as possible in trends with the seasons and the overall mood. As we wanted to have a quality family time thinking about what we did already and discussing our plans for the next 12 months, I decided to prepare a couple of light meals, colourful and rich and, of course, a little bit creative as well.
Also, I wanted something fit for both cheese and meat based meals.
As autumn is here and there are fresh vegetables are always on demand, I made the following choice:
zucchini
tomatoes
big mushrooms
sesame seeds
smoked tofu cheese
All together and with oil in the pan, they spent some time in the oven (heated at 150C) and disappeared shortly after in the bellies of the hungry members of my family.
The time dedicated to the preparation of this tasty meal was: maximum 15 minutes!
Plenty of time for blogging, isn't it?

Roasted tomatoes time
This is a very fast and easy meal - preparation time of maximum 15 minutes - and nevertheless tasty and fresh.
The ingredients are:
tomatoes
dried oregano
salt
(sometimes also some sesame seeds could add a specific taste)
olive oil
Head the oven to 150 and wait for a while, till the tomatoes are a little bit roasted. To be served with some fresh Greek cheese.

Brussels sprout with sesame
Overall, the time needed for preparing this tasty recipe is less than 30 minutes.
For 2 persons, you need:
250 gr. Brussels sprout, boiled
3 tablespoons sesame/walnut oil
100 gr. sesame seeds
The sprout and sesame seeds have to spend some 15 minutes together with the sesame/or walnut oil in the frying pan.
After, ready to be eaten!

Simple tofu receipe - Mushrooms, tomatoes and sesame seeds
From the book of Tofu recipes, a simple and affordable choice
For 3 persons
4 tomatoes, sliced
250 gr. white mushrooms
2 eggs
2 tablespoons sesame seeds
7 slices of white tofu
With 100 ml. of olive oil in pan, add the ingredients one by one. Mix them slowly and wait maximum 15 minutes, at 100C for having a very good breakfast, dinner or lunch.
And, anyway, here it is an amazing air of spring so be ready to finish fast the good cooking for spending more time outdoors.

Dealing with fish (this is not a post about the golden fish)
I love fish: it is clean, tasty, easy to cook and to digest.
Here are a couple of my recent experiments with white fish:
Fish with sesame and dried mint and garlic.
Fish with brocolli, sesame seeds and garlic.
Served with salty baked potatoes.
And never without the yogurt mint.

Moroccan carrot salad
From time to time, I simply fell in love with some recipes and/or ingredients. The taste effect is so strong that I can't live without. One of my long lasting relationship is with avocado: I use it all the time, as often as possible. Recently, I refreshed my reserves of avocado honey.
The latest entry is the Maroccan salad, I picked up the last week, from the same Cohen's book. Since, I did it again this Wednesday and again today.
My adapted variant is:
4 - or more, up to the number of guests - carrots, finely gratted
1 bunch of fresh parsley
30 gr. sesame seeds
100 gr. canola oil
1 spoon of salt
1 spoon of sugar
1 spoon of lemon juice
The carrots, the oil, the salt, the sasame, the sugar and the lemon juice, are heated together for 10-15 minutes, carefully mixed. At the end, you add the parsley leaves and you can serve it!
For me, the gratted part of the story was the most demanding one, as I need, probably, more exercises at the gym!
Cucumber salad: oldies but goldies
This is a classical presence in our culinary life. Easy to make, tasty at every moment of the day.
For having it on your menu, you don't need more than 10 minutes of preparation (chopping the cucumber and the dill, spreading the sesame seeds and the yogurt) and another 10 minutes to wait while the ingredients (1 bunch of dill, 1-2 cucumbers up to the number of guests, 25 gr. of sesame seeds, 100 gr. yogurt) are melt. On taste, you could add some oil (or some vinaigre) too, but it is good also without. (my choice)
Fresh and tasty, easy to digest and, last but not least, a good looking green presence!

Refreshing mandarine salad
2 bunch of fresh salad, washed and chopped
4-5 tangerines
sun flower oil
sesame seeds
salt
Blend them together for 2-3 minutes, put in the fridge for another half an hour - for allowing a dialogue and combination of ingredients and be ready to serve it with fish (in our case) or other meat-based meals or with some cheese and pasta.
Easy and tasty!

Add some zucchini
I am not a constant vegetarian, but I prefer for a long time to limit the meat ratio to once the week, maybe. I can live without meat, but to stimulate my appetite I need to create various combinations of vegetables. And, here, my imagination is playing an important role.
A couple of weeks ago - when I was decided to start writing about what I am cooking, hence the photos I tried to take as professionally as possible - I was about to prepare some ready-made tortellini, but I had the feeling that it will not be enough so tried to think a bit about a new combination.
I pick up from my special food closet:
- sunflower oil (100 ml.)
- sesame oil (3 drops)
- 1 zucchini
- sesame seeds (100 gr.)
- salt
Peel the zucchini and cut into small cubicles. Pour the sunflower oil in the heated pan, together with the salt, zucchini cubicles and sesame seeds. Mixed them together for five minutes, then pour the sesame oil. After 30-35 minutes, mix the composition with the tortellini and wait for another five minutes.
Ready to eat!
